Old Fashion Pecan Pancakes from Scratch Topped With A Fresh Berry Compote

After examining our dwindling pancake mix, I decided that pancakes from scratch would be the best way to feed everyone.

Here is the base Homemade Pancake’s recipe I used.

However, I doubled it and tweaked it a little.

Ingredients

Dry Ingredients
    • 1 cup All Purpose Flour
    • 1 cup Whole Wheat Flour
    • 2 tablespoons Oat Bran
    • 1 tablespoon Ground Cinnamon
    • 2 tablespoons sugar
    • 6 teaspoons baking powder
    • 1 teaspoon salt
    • Crushed Pecans
Wet Ingredients
  • 2 eggs
  • 1.5 cup milk {a little less or a little more is fine depending on the consistency you like}
  • 4 tablespoons oil

Instructions

  1. In a large measuring cup, whisk together dry ingredients
  2. Add wet ingredients and mix well
  3. Heat griddle and spray with non-stick cooking spray
  4. Pour batter onto hot griddle
  5. Cook until golden brown, about 3 minutes, flip and cook other side

I served the pancakes with a Berry Compote

Ingredients

  • 3 tablespoons Butter
  • 1/4 cup Pure Maple Syrup
  • Raspberries
  • Blackberries
  • Brown sugar
  • Splash of red wine

Instructions

  1. Combine butter and brown sugar in a medium size pan, and add the berries once the butter has melted.
  2. Add maple syrup and simmer on medium-low for 10 minutes.
  3. Add the splash of wine and reduce for another 5 minutes.
  4. Once your compote is done, add it on top of your pancakes and eat :).

We ate the pancakes with canadian bacon and it was quite tasty.
